breakfast taquitos!

i scrounged around my fridge this morning, in search of inspiration for today’s brunch.  i had leftovers from taco night, and decided to whip up from breakfast taquitos (something i haven’t made before, but thought i would give it a whirl!).

first, preheat the oven for 375.  next, i browned up some chorizo.  you can use leftover taco meat, bacon, ham, etc.  (i don’t eat beef or pork, so i used some spicy black beans.  you can use refried beans too.)  while the meat was cooking, i started making a little homemade salsa:

ingredients

  • 1/2 red onion (diced)
  • tomato (diced)
  • 1/4 cup yellow bell pepper (diced)
  • 1/4 cup cilantro (i didn’t have cilantro, so i used parsley!)
  • 1/2 lime
  • seasonings (i used cayenne pepper, paprika, chili powder, garlic powder, and sea salt)

directions

combine all of the ingredients into a bowl, squeeze with lime juice, and let it marinate in the fridge for awhile.

when i finished making the salsa, i scrambled some eggs.  next i took my corn tortillas and dipped them in vegetable oil.  next i filled the oil soaked tortilla with a little chorizo, egg, and cheese (you can use whatever cheese you like!  i had fresh mozzarella, which melted great!  queso fresco would be perfect!  goat cheese would be yummy too!).

next i rolled the tortilla and put the flap side down on a baking sheet.

i baked these for 10-12 minutes.  the last minute or two, i switched to broil, to ensure that the taquitos became nice & crispy!

serve with the homemade salsa, guacamole, and sour cream!  enjoy! :)

Live bloggin Martha Stewart

In the fallout of my father’s passing Ive been working from home (dont want to make anyone in the office uncomfortable with spontaneous crying and what not) and the one benefit of this is daytime television. Ok so I dont really like much daytime television but I do enjoy my occasional dose of Martha. Today looks like an interesting show with recession busting ideas and Aussie chef Pete Evans and I figured those of you not able to watch the show live might enjoy a play by play account (or not haha. This could be epic fail). So lets start the show!

1:03 Pete comes out, Im slightly disappointed with his Aussie accent. I have a few super Aussies at work and they all put his accent to shame. Oh well, theyre flipping through his cookbook to decide what to cook today.

1:05 Oh theyre cooking Huevos Rancheros and Steamed Arctic Char. Not very Aussie but delicious sounding regardless.

1:05 Wow Martha brought in eggs from her own chicken! I want Martha’s eggs!

1:06 Apprently all dishes should have color, flavor and texture. The crispy tortilla ads the texture to the Huevos Rancheros.

1:06 Pete is talking about hout Australia is such a new country that they dont really have their own cuisine yet, they are like America and mostly a melting pot with a few emerging specialties. Ive always been a fan of vegemite and toast ;)

1:13 OMG Pete’s fish that he brought with Australia to cook was confiscated at LAX. Epic lols. Also I just realized that Martha and Pete kind of look like twinsies, they are both wearing light purple button up shirts. How cute.

1:14 Hmm never realized how much Arctic Char looks like salmon. They are adding the soy sauce and other ingredients. Fun fact: In Australia they call green onions either green onions or spring onions.

1:15 Interesting Pete is using the garlic for texture. Wonder what hes going to do with it…fry it maybe?

1:17 Yup fried it with some red chili. Wow that was an easy recipe! Only a few ingredients and very simple. Prep time was like 5 minutes and cook was about 8! Amazing!

1:22 So the woman showing how to make the stove says one day she was in her basement and a box started to look like a stove. This woman must grow shrooms in her basement.

1:23 Aww she originally made it to cary pies in! Now I have an excuse to make one!

1:30 Man, Martha must be on speed or something because she does her show in lightning speed! Either that or she is a domestic robot sent from the future to destroy us with cupcakes. Mmmm apocalyptic cupcakes.

1:32 Oops the rack inside the oven wont stay up. Martha is not amused and is scolding her guest. Im sticking with the evil Cylon Martha theory right now.

1:34 And the oven is done! How cute! Theres even a light inside that turns on and off when you open and close it

1:50 Another cardboard crafter is up next! Wow shes a 19th century literary major with 1 kid and another on the way. Martha shows off the cardboard washing machine and table that she made for her kid. They are going to show us how to make a cardboard furniture

1:52 How neat, all of the furniture is made of interlocking pieces so you dont have to glue them together to assemble. That way kids can take them apart and travel with them. The pieces are all very modern looking.

Hangover recipes

As I’ve mentioned tis the season for parties and drinking…each day I see my fallen comrades trudging around wearily with sunglasses on over their bloodshot eyes cursing the day. Yes your initial instinct is to painfully drag yourself down the street for a greasy breakfast burrito….but when youve got a hangover grease isn’t necessarily the best idea. You want to fill your stomach and replenish lost nutrients and liquids from the night before (sorry there is no way to replace lost dignity though). Heres some tasty and healthy hangover recipes that wont require too many brain cells to execute.

Fit and Fabulous Pancakes

Whole grain oats, egg whites, a banana and vanilla or some nuts for extra flavor is all you need to make quick and tasty pancakes to fill your battered stomach.

Poached Eggs for a Hangover

Simple and easy which is what you need when your brain is barely functioning. Poached eggs are also far more healthy than greasy scrambled eggs or an omlete. Bonus is the sauce includes pickle juice which is a popular hangover cure in Poland because pickle juice is full of minerals!

Chicken Menudo

For me hearty spice filled soups have always been the best hangover cure. This recipe is a little more difficult than the previous two, but once you cut up everyone all you do is simmer and wait. Menudo is usually done with pork or beef but chicken is more healthy and provides plenty of hangover relief.

Anchovy and Potato Gratin

As odd as it sounds, this Scandinavian dish is a great hangover cure because you combine starch and anchovies. Im not really sure why anchovies cure a hangover but its been a tip I’ve heard over and over.

So there are a couple quick recipes you can try out next time you throw back a few too much at a holiday party. As far as drinks go your best bet is a Coke on ice (real Coke not diet), some Gatorade and lots and lots of water. A simple banana smoothie wouldnt hurt either. Watch out for drinking too much caffeine though as that will dehydrate you even more. But your best bet is lots of water and some rest. If anyone has any hangover cures I would love to hear them!

Mini Huevos Rancheros

Well its been a busy week in the office, Im working on a couple pitches so I’m tied up this week which mean little time for blogging. So I’ll do what every great blogger does….get someone else to write something for me! My dear friend Katie over at Blue Bomber posted up the most amazing and delicious looking Mini Huevos Rancheros this morning.

What I love is that these are tiny and (presumably) delicious…..two of my favorite things! These are also great because you can easily customize them to suit your tastes…spicy, veggie, bacony, etc.

Obligatory Thanksgiving leftovers post

So tomorrow is the big day….the day where we feast on the flesh of a thousand turkeys (or tofurkeys if you so choose). Inevitably there are going to be leftovers, but theres only so many turkey sandwiches and turkey casseroles you can eat before you just can’t take it anymore. Heres a few recipes that take your turkey leftovers one step beyond.

Turkey Curry

Anyone who knows me knows I love curry. This recipe is a quick easy way to reuse your turkey, but totally changing the flavor so no one feels like theyre just having a repeat of Thanksgiving.

Turkey and Broccoli Quiche

The day after Thanksgiving everyone goes into that inevitable food coma…personally I dont feel like eating until midday at least. Why not recycle some of that Turkey into a delicious brunch dish?

Mashed Potato Croquettes

Why should turkey have all the fun? My mom always used to make too much mashed potatoes so we would have a plethora of those left over every year. I’ve always loved croquettes, so just take your potatoes add some spices (I’d throw in some green onions too) and bread and fry the suckers. You could also add salmon or more cheese to create different types of croquettes. These would go great with your turkey curry!

Stuffing Frittata

Stuffing, yet another side dish that usually doesnt get changed too much when it comes to leftovers. But simply by adding some eggs and cheese, you can create a whole new dish. Also perfect for a post turkey coma brunch.

Mashed Potato Pancakes

One of my favorite things to do is stroll over to the local Irish pub and order up a plate of boxty and trout. Boxty is basically just Irish potato pancakes (they are similar to this recipe only a bit of flour and baking soda is added) so you could easily substitute these Mashed Potato Pancakes in. Top them with some smoked trout or salmon and cream and you have an utterly delicious meal.

Leftover Tofurkey Stroganoff

Ah my dear veggie friends…don’t think I forgot about you! Even you can get some mileage out of your tofurkey leftovers! Just mix up the leftover veggie gravy with some garlic,sour cream and mushrooms then pour it all over rice or noodles for instant deliciousness.

Tofurkey Pesto Stuffed Mushrooms

Now this recipe sounds so delicious Im almost jealous that Im not cooking a tofurkey! Pesto, pumpkin seeds and lemon get blended together to create a totally new tofurkey experience. My mouth is watering!

So there you have it, just a few easy and delicious alternatives to reusing your Thanksgiving leftovers. I’ll try and pop in and write another blog before the weekend but no promises since the bacon wrapped turducken is sure to induce a mighty turkey coma.
