2 quick healthy breakfasts

As good as I generally am about eating, breakfast is the one area where I falter. Generally I dont eat breakfast, but lately Ive been forcing myself to get into the habit by developing super quick super healthy takes on some of my favorite breakfast guilty pleasures. FYI all recipes are single servings but can easily be multiplied and modified to your taste!

Guilty Pleasure #1: Breakfast Sandwich

As tasty as these tempting to go meals are, they arent necessarily the best for you. Fried egg, cheese and meat on bread….not exactly the healthiest start to your day is it? My solution, a Poached Egg Breakfast Salad that you can make in under 10 minutes and you dont even have to dirty many dishes!

Poached Egg Breakfast Salad

Ingredients
1 egg
1 cup lettuce (any kind that you prefer is fine)
1-2 cups spinach washed and cleaned
1/4 cup red onion
1/3 cup diced tomato or a few cherry tomatoes
1 slice turkey ham lunch meat
Blanched green beans or broccoli (optional)
water
white vinegar
pepper
white balsamic vinegar

First you need to wash clean and dice up all the veggies. Place them in a bowl and set aside. Take a small bowl (one that can hold about 2 cups of water) and fill 2/3rds full with water then add a dash of white vinegar. Crack an egg into the bowl (do not break yolk) and cover with a plate. Place in your microwave and cook for about 80 seconds or until the white is no longer translucent. I prefer super runny eggs so I usually cook a little under 80 seconds but by all means cook longer if you prefer a firmer yolk. While the egg is cooking take a slice of turkey ham and dice it finely and add it to the salad.

Once the egg is done, spoon it onto the salad. Top with some fresh ground pepper and hit it with a bit of white balsamic (if you dont have white balsamic white wine vinegar or regular balsamic will do). Split the egg and enjoy!

Guilty Pleasure #2: Bagel and Lox

This is probably my all time favorite breakfast guilty pleasure…the rich cream cheese…the smoky rich salmon…the hearty bagel…the tangy onions…it all comes together for flavor euphoria. Unfortunately, bagels and cream cheese arent exactly the healthiest option in the morning. So, I developed a healthy and gluten free way to enjoy my favorite breakfast treat!

Healthy Lox Sandwich

Ingredients
1 rice or corn cake (I prefer the herb flavored ones)
Smoked Salmon aka Lox
Low Fat cottage cheese (my favorite for this recipe is one with dill)
A few tomato slices
A few slices of red onion
Capers (optional)
Lemon
Black pepper

This one honestly couldnt be easier and tastes so indulgent! Take your rice/corn cake and put a hefty spoonful of cottage cheese on it. Place the lox on top of this then top with the tomato and onion. Sprinkle it with capers if you prefer (Im a big capers fan but they may be too salty for some) and crack some fresh black pepper. Hit it with a squirt of lemon and enjoy!

So there you have it, two breakfast guilty pleasures redone to be healthy and quick. I do both of these on a regular basis and neither take more than 5 minutes and can even be made in the office (just bring pre chopped veggies). Enjoy!

an easy steak (or salmon) dinner

i am a busy lady.  between working a full time job, going to school two nights a week, working out, occasionally picking up shifts at Whole Foods Market, and sustaining a normal social life, i sometimes have a hard time cramming amazing dinners into my schedule.  however, with a little creativity and determination, one can accomplish anything.

i thought i would share my latest creation: garlic thyme steak (or salmon, which i made myself since i don’t eat beef or pork).  this is such an easy marinade that you can prepare the night before or in the morning of.  i also paired this with a couple baked potatoes & some steamed lemon butter broccoli, which take little effort.  here are the recipes:

Garlic Thyme Steak/Salmon

ingredients:

  • 2 6-8 ounce round steaks or salmon
  • 1/4 cup minced garlic
  • 3 tablespoons olive oil
  • 3 teaspoons of fresh thyme

using a baking dish, combine the garlic, olive oil, and thyme.  throw your steak or salmon into the mixture and marinate for at least 30 minutes (or up to 24 hours).  make sure to flip the steak/salmon a few times to ensure thorough marinating on both sides.

to cook, place steak/salmon in a skillet or on the grill.  cook each side for 5-7 minutes until golden brown.

REMEMBER: baked potatoes take a long time to cook in the oven.  scrub and prick your potatoes with a fork several times, then wrap them in foil.  preheating your oven to 425 degrees, bake your potatoes for 45-50 minutes.  during the last 15minutes of baking your potatoes, throw your washed and cut broccoli into a pan with a steam until your potatoes are done.  during the last 10 minutes of baking your potatoes, begin cooking your marinate steak/salmon.

unsure of how to steam vegetables? check out this video!

***SHORT ON TIME?  microwave your potatoes!  after scrubbing & pricking your potatoes with a fork several times, place on a microwavable plate and cook for 5 minutes in your microwave.  turn over, then cook for another 5  minutes.  when the potatoes is soft, remove from the microwave, slice open, and add your favorite ingredients (butter, sour cream, cheese, chopped bacon, green onions, etc!)

when your baked potatoes are done, remove from oven.  place your steamed broccoli in a large bowl and add a tablespoon of butter, a squeezed lemon, and a little salt & pepper to taste.  prepare your baked potatoes as desired, add some steamed lemon broccoli, and place your cooked steak or salmon (top off with the remaining marinade from your baking dish) on your plate.  ENJOY!!!

Make your own vegetable pasta!

As many know, I am on a wheat free diet for medical reasons so often I find myself having to come up with substitutes for my dishes. Im Italian so I love pasta dishes, but Ive never really liked the taste and texture of pasta…its too bland and gummy. Enter veggie pasta. Veggie pastas are when you use a vegetable to simulate the pasta in your dish. Its far more healthy than the carb rich noodles and I find it much more tasty. The easiest to prepare and most popular is spaghetti squash. The large gourd is cheap and all you have to do is cut it in half, boil it and then scoop out the meat with a fork and it will fall out like noodles.

Cool huh? I use this all the time when I need spaghetti noodles and frankly I like it more than regular spaghetti. Its got a more firm texture and a flavorful nutty taste. Im a big fan of just tossing the noodles with some olive oil and garlic then sprinkling with some fresh Parmesan cheese.

One of my recent discoveries has been the use of zucchini as noodles. All you have to do is take a zucchini and cut the ends off and peel the skin. Then using a potato peeler slice long even strips of the zucchini. About 2 average sized zucchinis makes enough for one serving.

Heres my 12seconds video of how to make the noodles

Cooking Lesson 1: How to make zucchini noodles in 12 seconds! on 12seconds.tv

Once you have a big pile of zucchini noodles you can either quickly boil them our lightly saute them in oil. Be careful not to cook them too long or they will become soft and mushy. All you need to do is get them nice and hot, any longer than that and they will loose their noodle-like texture. I really like using them in a chili and soy stir fry but you can use them in any recipe that calls for flat noodles. So enjoy the healthy and delicious taste of veggie noodles!

8Bit Heart Cookies

Snack or Die has a new recipe up just in time for Valentines Day!

8Bit Heart Sugar Cookies

Mmmm pixels and sugar, a match made in heaven! If youve been hesitant to try a Snack or Die recipe because you feel your confectionery skills are not up to par, this is surely a good beginners project. Hell all you need to do is buy a vat of pre-made sugar cookie dough, a heart sapped cookie cutter and some M&Ms and youre halfway done! I love that the only problem Jocelyn ran into was getting the right color M&Ms, however her solution was quite clever…and delicious…

“What I ended up doing is pouring a bag of M&Ms into a small dish and ate all the non-red M&Ms. Problem solved.”

to quench our American thirst!

to quench our American thirst!

to wash that all down, seanalyn found these incredible ‘white trash’ and ‘red neck’ wines from Bakersfield, California, while visiting her parents.  not only are they completely humerous, but they were quite tasty as well.

while enjoying the feast, we watched Independence Day on blu-ray!  it was a great, AMERICAN day!

Feast like the President!

I hope you checked out Katies post about Inaguration Day recipes and drinks for an awesome way to ring in our bright shinny new president. If youre still looking for more ways to celebrate the day, why not eat what Obama and 200 guests ate at the Inauguration Luncheon today? I dug up the menu and recipes for their fabulous feast and thought I would share them with you all!

The Inaugural Luncheon began in 1897 when the Senate Committee on Arrangements gave President McKinley and several guests a luncheon, although the current form of the Inaugural Luncheon did not begin until 1953. The food typically reflects the home states of the new President and Vice President.

The first course was a Seafood Stew filled with Maine Lobster and scallops. It was paired with a Buckhorn Vineyards 2007 Sauvignon Blanc.

The second course was A Brace of American Birds (pheasant and duck) served with Sour Cherry Chutney and Molasses Sweet Potatoes. It was paired with a Goldeneye 2005 Pinot Noir.

The third and final course was a classic Apple Cinnamon Sponge Cake with Sweet Cream Clace and it was paired with Korbel Natural’s “Special Inaugural Cuvee” (a California Champagne).

The recipes for all the courses are available as a download from senate.gov, click this link to download the pdf.

Happy Obama Feast!

Battlestar Galactica premiere party on Friday…

it’s almost here!  that’s right nerds, Battlestar Galactica (BSG) premieres on Friday!  both seanalyn and i are preparing ourselves for this epic event!  i am hosting a BSG party at my apartment and inviting lots of hungry guests.  seanalyn and i will be brainstorming ideas and recipes for our themed party.

i searched around, found some great ideas online, and added seanalyn & mine:

a frakin’ Battlestar Galactica cake

Marisa from slashfood.com posted this amazing edible artwork by local baker/artist Zoë Lukas, who is in the process of opening up her own bakery in Philly.  The chocolate devil’s food cake is ‘filled with raspberry jam and ganache, iced with chocolate buttercream and ganache, decorated with chocolate ships and explosions, silver dragees and silver and gold space dust.’

    the Cylon Jack-O-Lantern

Allison from seriouseats.com posted this incredible masterpiece with a working cylon laser eye.  although not edible, this would make for a great centerpiece at our party!  too bad i’m not that handy at carving pumpkins!

    seanalyn’s idea

i love it!  she plans on taking the infamous Eye of Jupiter that Starbuck consistently obesses over and making a glorious fruit tart out of it.  (she is so clever!)

***pictures of her appetizer will follow after our party

    my idea

i am thinking of taking those Pillsbury Crossiants, stuffing them with crab & cream cheese, and creating foldovers in the shape of cylon raiders.  i’ll give the illusion of their notable ‘laser eye’ with a slice of red pepper.

um, we’ll see how this one turns out!

    lastly, the Battlestar Drinking game…

on this nerdtastic spacecast community forum, i found an awesome thread with some very creative BSG themed drinks, here’s a few i loved:

    1. THE RED DRESS – (AN ODE TO NUMBER SIX)

    · 2 parts Gin

    · 1 part Pomegranate Juice

    · 1 part Cranberry Juice

    · a dash of Grenadine

Stir and Serve with a touch of ice in a slender Collins glass.

    2. TWISTED MESSIAH – (THE BALTAR COMPLEX)

    · 1 part white Tequila

    · 1 part Ouzo

    · 1 part tomato juice

    · a dash of Worcestershire sauce

Shake and serve in an old fashioned glass.

    3. SKINJOB – (CYLON LOVER)

    · 1 part Bailey’s Irish cream

    · 1 part Tequila Rose

    · a dash of Amaretto

Shake and serve in a Shot Glass

what i loved even more is that there is actually a Battlestar Galactica drinking game with rules and everything!

please let us know if you have any creative ideas, thoughts, comments, suggestions, etc.  we absolutely love hearing from you!
