LOST themed menu!

It’s a good thing for our intrepid survivors that mangoes are always in season on this magical island. Mangoes will definitely be on the menu at our season finale party!

But there have been more than just mangoes, of course. Jin was able to catch plenty of fish and the occasional haul of oysters. Wild boar was on the menu a few times. Oh, and don’t forget those handy Dharma food drops!

Appetizers

Cheeseburger Sliders and Mini Grilled Cheese Sandwiches – In honor of those first meals Juliet brought to a captive Jack.
• Veggies in Ranch Dressing – Really, Hurley? The whole Dharma food closet and you hoard ranch dressing?
Smoke Monster Popcorn – Of course!

Main Course and Side Dishes

Fish Steamed in Banana Leaves – Bless Jin and his expert fisherman skillz.
Braised Summer Pork Shank – Or wild boar if you can get your hands on one.
Tomatoes Sprinkled with Balsamic – Sun’s one perfect tomato…
Dinner Rolls – We had to dig deep into LOST lore for some carbs. See: Juliet’s dinner date with Ben.

an easy steak (or salmon) dinner

i am a busy lady.  between working a full time job, going to school two nights a week, working out, occasionally picking up shifts at Whole Foods Market, and sustaining a normal social life, i sometimes have a hard time cramming amazing dinners into my schedule.  however, with a little creativity and determination, one can accomplish anything.

i thought i would share my latest creation: garlic thyme steak (or salmon, which i made myself since i don’t eat beef or pork).  this is such an easy marinade that you can prepare the night before or in the morning of.  i also paired this with a couple baked potatoes & some steamed lemon butter broccoli, which take little effort.  here are the recipes:

Garlic Thyme Steak/Salmon

ingredients:

  • 2 6-8 ounce round steaks or salmon
  • 1/4 cup minced garlic
  • 3 tablespoons olive oil
  • 3 teaspoons of fresh thyme

using a baking dish, combine the garlic, olive oil, and thyme.  throw your steak or salmon into the mixture and marinate for at least 30 minutes (or up to 24 hours).  make sure to flip the steak/salmon a few times to ensure thorough marinating on both sides.

to cook, place steak/salmon in a skillet or on the grill.  cook each side for 5-7 minutes until golden brown.

REMEMBER: baked potatoes take a long time to cook in the oven.  scrub and prick your potatoes with a fork several times, then wrap them in foil.  preheating your oven to 425 degrees, bake your potatoes for 45-50 minutes.  during the last 15minutes of baking your potatoes, throw your washed and cut broccoli into a pan with a steam until your potatoes are done.  during the last 10 minutes of baking your potatoes, begin cooking your marinate steak/salmon.

***SHORT ON TIME?  microwave your potatoes!  after scrubbing & pricking your potatoes with a fork several times, place on a microwavable plate and cook for 5 minutes in your microwave.  turn over, then cook for another 5  minutes.  when the potatoes is soft, remove from the microwave, slice open, and add your favorite ingredients (butter, sour cream, cheese, chopped bacon, green onions, etc!)

when your baked potatoes are done, remove from oven.  place your steamed broccoli in a large bowl and add a tablespoon of butter, a squeezed lemon, and a little salt & pepper to taste.  prepare your baked potatoes as desired, add some steamed lemon broccoli, and place your cooked steak or salmon (top off with the remaining marinade from your baking dish) on your plate.  ENJOY!!!

Ultimate Super Bowl Snack Stadium

This weekend is the Super Bowl so of course there will be a plethora of sporting snacks to be had at every Super Bowl party. But if you really want to steal the thunder then I suggest creating this monstrosity of snacking.

Made by the guys over at Holy Taco this creation includes the following:
The Field:

  • 1 Pound of Guacamole
  • 15 Oz. Queso Dip For The Steelers End Zone
  • 15 Oz. Salsa For The Cardinals End Zone
  • 2 Oz. Sour Cream for the Field Lines

The Players:

  • 15 Vienna Sausages
  • Helmets – 3 Oz. Sharp Cheddar Cheese

The Goal Posts:

  • 1 Slim Jim for Each Goal Post
  • 1 Oz. Monterey Jack Cheddar To Anchor (each)

The Stands:

  • 58 Twinkies
  • 1 Pound of Bacon
  • 1 Bag of Nacho Cheese Doritos
  • 1 Bag of Cheetos

post inauguration party pictures!

howdy folks! last night seanalyn and i got together to celebrate the historic inauguration of the 44th president of the United States, Barack Obama! we put together a delicious ‘American’ themed meal.

we started out with some creative appetizers made by seanalyn:

creatively, seanalyn thought of a great ‘OBAMANATION’ appetizer.  with tomato, fresh mozzarella, and a blackberry mixed with fresh basil and balsamic reduction, this appetizer was completely festive and flavorful!

i made the entree, which consisted of a Spicy 4 Bean Turkey Chili:

kt’s Spicy 4 Bean Turkey Chili:

Ingredients:

  • 1/2 small onion, diced (i used a food processor)
  • 1 orange pepper, diced (or food processor)
  • several cloves of garlic, chopped
  • 1 teaspoon olive oil
  • 1 pound of ground turkey
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon ground cayenne pepper
  • 3 tablespoons hot sauce
  • 1 tablespoon chili powder
  • 2 tomatoes, chopped (i used the food processor)
  • 2 15 oz cans tomato sauce
  • 1 can red kidney beans, rinsed
  • 1 can black beans, rinsed
  • 1 can vegetarian baked beans
  • 1 can pinto beans, rinsed
  • On medium heat, using a large soup pot, saute onion, orange pepper and garlic in olive oil until soft. Add ground turkey or beef; brown. In a small bowl, combine spices and hot sauce together into a mixture, and then add to ground turkey mixture. Add tomatoes, tomato sauce, and beans. Simmer on Medium heat for 10-15 minutes, stirring occasionally. Garnish with grated Cheddar cheese, onions, and sour cream.

to wash that all down, seanalyn found these incredible ‘white trash’ and ‘red neck’ wines from Bakersfield, California, while visiting her parents.  not only are they completely humerous, but they were quite tasty as well.

while enjoying the feast, we watched Independence Day on blu-ray!  it was a great, AMERICAN day!

Feast like the President!

I hope you checked out Katies post about Inaguration Day recipes and drinks for an awesome way to ring in our bright shinny new president. If youre still looking for more ways to celebrate the day, why not eat what Obama and 200 guests ate at the Inauguration Luncheon today? I dug up the menu and recipes for their fabulous feast and thought I would share them with you all!

The Inaugural Luncheon began in 1897 when the Senate Committee on Arrangements gave President McKinley and several guests a luncheon, although the current form of the Inaugural Luncheon did not begin until 1953. The food typically reflects the home states of the new President and Vice President.

The first course was a Seafood Stew filled with Maine Lobster and scallops. It was paired with a Buckhorn Vineyards 2007 Sauvignon Blanc.

The second course was A Brace of American Birds (pheasant and duck) served with Sour Cherry Chutney and Molasses Sweet Potatoes. It was paired with a Goldeneye 2005 Pinot Noir.

The third and final course was a classic Apple Cinnamon Sponge Cake with Sweet Cream Clace and it was paired with Korbel Natural’s “Special Inaugural Cuvee” (a California Champagne).

inauguration day recipes

it’s finally here!  inauguration is tomorrow, and loving themed meals, i couldn’t think of anything better than searching for Obama recipes.

due to the fact that Obama is from Illinois, Chicago style hot dogs are a must!  broil, boil, or steam some all beef hot dogs.  make sure to keep all of the toppings accessible so your guests can add whatever their hearts desire.  add some waffle fries and you’ve got a perfect lunch!

not a big hot dog fan?  you can substitue the all beef hot dog for a tofurky dog or turkey dog!

another great idea is Obama’s Family Chili!

OBAMA’S FAMILY CHILI:

Ingredients:

  • 1 large onion, chopped
  • 1 green pepper, chopped
  • several cloves of garlic, chopped
  • 1 teaspoon olive oil
  • 1 pound of ground turkey/beef
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground oregano
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground basil
  • 1 tablespoon chili powder
  • 3 tablespoons red wine vinegar
  • 2 to 4 tomatoes, depending on size, chopped
  • 1 can red kidney beans
  • 3 cups cooked white or brown rice
  • Grated Cheddar cheese, chopped onions and sour cream, for garnish
  • On medium heat, using a large soup pot, saute onion, green pepper and garlic in olive oil until soft. Add ground turkey or beef; brown.In a small bowl, combine spices together into a mixture, and then add to ground turkey or beef mixture. Add red wine vinegar. Add tomatoes and let simmer until tomatoes cook down. Add kidney beans and cook for a few more minutes.Serve over white or brown rice. Garnish with grated Cheddar cheese, onions and sour cream.

i found this delicious dessert, titled ‘Michelle Obama’s Apple Cobbler.‘  i am pretty sure that Michelle Obama had nothing to do with this recipe, but it’s definitely a Midwestern treat!  what i love about this recipe is that it goes great with some vanilla ice cream, it’s moist, and perfectly sweet!

MICHELLE OBAMA’S APPLE COBBLER:

Filling:

  • 8 Granny Smith apples, peeled and sliced [or a bag of frozen peeled apples]
  • 1-1/2 to 2 cups of brown sugar
  • 1-1/2 teaspoons cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup white flour

Mix these ingredients together in a bowl and let it sit in the refrigerator overnight so the spice goes all the way through the apples.

Crust:

  • 3 sheets refrigerated pie crust
  • 1 stick of butter

Preheat oven at 325 degrees. Butter and flour the bottom of a large baking dish. Roll out three pie crusts real thin — as thin as possible. Layer the bottom of the pan with 1-1/2 of the pie crusts and prick a few holes in it. Pour the apples with the liquid into the pie pan. Dot 3/4 of a stick of butter around the apples. Use the final 1-1/2 pie crusts to cover the apple mixture entirely (let the pie crust overlap the pan).

Pinch the edges of the dough around the sides of the pan so the mixture is completely covered.

Melt final 1/4 stick of butter and brush all over top of crust.

Reduce the oven temperature to 300 degrees. Bake at 300 for up to 3 hours — that’s what makes the crust flaky, like Barack likes it. Put the cobbler in the oven and go for a walk, go to the store, or do whatever you have to do around the house. Start looking at the cobbler after two and a half hours so it doesn’t burn.

OBAMA EXPRESS-O: Expresso, Vodka and Baileys.

WASHINGTON APPLE: Apple Pucker, Cranberry Juice, Sprite, and Crown Royal.

TEAM OF RIVALS: Kahlua, Cocoanut rum, Baileys, layered in shot glass.

OBAMA MAMA II: Vodka, Orange Juice, Pineapple Juice, Blue Curreco, Cherry Garnish.

HOPE FLOAT: Baileys, Butterschotch Schnapps, float Creme de Cocoa on top.

of course, with all of my themed ideas, there is a drinking game included!  sip on some of the above mentioned drinks while playing this game:

Rapid beverage chiller

While trolling about the internet today I came across this product…

The Cooper Cooler HC01-A Rapid Beverage Chiller

This contraption boasts the ability to take a room temperature can of juice, beer, soda or even a bottle of wine and make it a thirst quenching 44 degrees in just a matter of minutes. The product costs about $50 on sale at Amazon which to me is a bit pricey for the product. However there have been many times (like Tuesday night) where I just served dinner only to realize that I forgot to chill the bottle of white wine. Lucky for me my freezer is a beast and can chill things about twice as fast as most other freezers. Still, I can definitely see the appeal of this product especially for parties and entertaining. I think I’ll wait until it drops another $20 before I consider picking it up thought.

If you too dont feel like shelling out $50 for a chilled beverage, check out this episode of one of my favorite shows, Mythbusters, where they look into myths about how to rapidly chill a 6-pack. If you feel like wasting your fire extinguisher (those things are expensive to refill) you can chill a beer in a matter of seconds by blasting it with the extinguisher.
