i scrounged around my fridge this morning, in search of inspiration for today’s brunch. i had leftovers from taco night, and decided to whip up from breakfast taquitos (something i haven’t made before, but thought i would give it a whirl!).
first, preheat the oven for 375. next, i browned up some chorizo. you can use leftover taco meat, bacon, ham, etc. (i don’t eat beef or pork, so i used some spicy black beans. you can use refried beans too.) while the meat was cooking, i started making a little homemade salsa:
- 1/2 red onion (diced)
- tomato (diced)
- 1/4 cup yellow bell pepper (diced)
- 1/4 cup cilantro (i didn’t have cilantro, so i used parsley!)
- 1/2 lime
- seasonings (i used cayenne pepper, paprika, chili powder, garlic powder, and sea salt)
combine all of the ingredients into a bowl, squeeze with lime juice, and let it marinate in the fridge for awhile.
when i finished making the salsa, i scrambled some eggs. next i took my corn tortillas and dipped them in vegetable oil. next i filled the oil soaked tortilla with a little chorizo, egg, and cheese (you can use whatever cheese you like! i had fresh mozzarella, which melted great! queso fresco would be perfect! goat cheese would be yummy too!).
next i rolled the tortilla and put the flap side down on a baking sheet.
i baked these for 10-12 minutes. the last minute or two, i switched to broil, to ensure that the taquitos became nice & crispy!
serve with the homemade salsa, guacamole, and sour cream! enjoy! :)
